I'm making egg bagels as I can't find any near where I live. Egg bagels are the best!
The NY-based bagel recipe states only non-diastatic malt powder will give the classic NY bagel flavor and the shine associated. Curious what it is about using the barley malt syrup that is stated here to have the better flavor? Such as, is it sweeter, or...?
I'm going with this NY egg bagel recipe but curious about the flavor differences. Would love opinions/reasonings.
