Hi Gail! While I don't have a specific source for malted rye flour, the flavor of malted barley versus malted rye would be pretty comparable, especially since such a small amount is used in each recipe. If you were to test them side by side, you would find that the fermented rye flour has a sourness in addition to the earthy sweetness, whereas the malted barley flour is mainly just the earthy sweetness.
