Hi Reign, I have seen some croissant recipes that call for a small amount (about a teaspoon) of diastatic malt powder, so you could try that. Were you thinking of adding the vital whey protein in place of milk powder? I'm not sure how well this would work, so I would stick with milk powder if you can get it.
