Hi Jo, for non-diastatic malt you can generally use about the same amount of another sweetener like brown sugar, molasses or honey. It's trickier finding a gluten-free substitute for diastatic malt powder, but this tends to be an optional ingredient, so it most cases your recipe will still work fine if you leave it out.
