Hi Tracey, we're bakers (not doctors or dieticians), so can't speak to the health benefits of this method (for either sourdough or yeast-raised dough), but we can definitely testify to the flavor boost you can get from adding an overnight ferment in the fridge to either a sourdough or yeasted bread recipe.
