Hi Patricia, tips #3 and #6 will help you out here. It sounds like you may be letting your bagels rise a bit too long before boiling, or perhaps leaving them in the boiling water a little too long. I would recommend experimenting a bit with a slightly shorter rise time, and keep an eye on them in the water.
