Barb's suggestion is just what I do: place the empty pot in the Instant Pot and set it for the YOGT setting, let it heat up for about 15 minutes, then turn it off and plop the dough in, lid the pot and leave it. Because the Instant Pot is insulated, it keeps the heat in fine.
