Thank you for the whole set of articles in the Sustainable Baking Guide! I very much appreciate the reminder about using buckwheat flour and pointing out that King Arthur Baking has organic light buckwheat flour and it is gluten-free. Excellent! And I appreciate the article on alternatives to single-use plastics and the helpful King Arthur alternatives. I have made a lot of progress in reducing my use of single-use plastics but I can and will do more. Good for King Arthur for taking a lead in Sustainability!
