My Mother-in-Law taught me to bake bread about 40 years ago and she had been baking bread since she was 9 years old! She always used a towel to cover the bread when waiting for it to rise and she never used plastic wrap. It worked for me too. It always seemed to work better when the air had some humidity and when it was warmer.
