This is a good method, Jody! You just want to make sure you have a substantial enough dish towel that it creates a tight enough seal so that the dough doesn't dry out. Lots of times people call the hotline because their dish towel didn't quite do the job that plastic wrap does and their dough begins to form a crust. The dish towel can also stick to the dough if it comes in contact, so spraying the top of the dough with a non-stick spray could be a good way to prevent that from happening.
