David--I have learned that one does not have to cover loaves of bread for them to rise. For many years, I have used my electric oven for proofing my bread. I heat it a tiny bit, and use a damp lightweight kitchen towel, first over my bread bowl and second, laying it spread out on the lowest oven shelf. When I place it on the shelf, I always dampen it some more, so that when the loaves are placed on the center shelf, they are exposed to a very comfortable and quiet moist environment.
