These are all great tips and comments and I commend King Arthur Baking for addressing this important topic. But I challenge recipe writers to PLEASE stop specifying in recipes that we should cover our bowls with plastic wrap! Reading most modern bread recipes one would think bread baking only became possible after the invention of plastic wrap!
