Plastic sandwich bags - no, no, never. There are many types of reusable silicone baggies out there (Stasher is one brand) that can be washed in the dishwasher, used in the freezer or microwave, and used for in-home sou vide. They may seem expensive at first look, but when you consider the cost of boxes and boxes of plastic baggies, they are cheap. If you give some to friends, you can then exchange cookies and brownies and muffins and never worry whose bag is whose, because you're all using them. And Bees-wrap is excellent for bread, and KA sold at one time some silicone '"shower-cap" like bowl covers that work really well.
