Anne Wilson April 12, 2022 at 9:21am When proofing bread dough, shaped and in the pan, I use the tops of my (yeah, plastic) cake carriers to cover the pans. They are tall enough to allow the dough to fully rise before baking, keep it moist, and don't damage the surface of the dough. Reply
