I make long rise bread dough (just proof on counter overnight). I use an empty icecream bucket. If I plan on making a small loaf every day I just leave a small amount of dough in the bucket and use that instead of yeast, just adding more flour water and salt. Best part of that system is I don't have to even wash the icecream bucket for a few days at least
