I have a collection of old linen calendar towels that I use on top of my dough as it proofs. I rinse one in very hot water from the tap and lay it on top of the bowl. I proof in my microwave by boiling water in a cup then leaving the cup in the microwave while the covered dough proofs. Works perfectly no matter how cold my kitchen is.
