I am ecstatic to see a vegan recipe among King Arthur's specialty baked goods as I am severely allergic to milk products. Yes, I can make many of these recipes by substituting ingredients. Sadly, most recipes do not come out as pleasing because the fat and water content are very different in dairy free "butters", "cheeses" and "milks". KA has tackled gluten free beautifully and I've been a little jealous, wishing that they would continue the trend and take on other big allergy issues. Kudos for including an original recipe that uses dairy free ingredients!! I hope this is the start of another good thing for King Arthur. Please continue with more vegan style recipes, so that those of us with allergies can have products with lovely textures on the first try - without a bunch of experimenting. These cookies are amazing!
