+100 to the concept of getting a scale for weighing ingredients. Makes it SO much easier to stay consistent when baking. I got a KD-8000 years ago (an 8kg capacity version of the KD-7000 in the article,) and it's probably one of the best kitchen purchases I've ever made. Still running 10 years later, too.
Fun fact: If you find yourself needing a milligram scale in a pinch (pun intended,) you can often find them in smoke shops. Obviously they're for a different sort of baking as sold, but the one I picked up is good quality, decently priced, and of course, was readily available when I found I could REALLY use one "right now."
