Good observation, Gregg! This recipe is meant as a quick-and-dirty approach to kouign amann as the blog title suggests. You can certainly chill this dough if you would prefer to hydrate the dough a bit more and cause less shifting of the dough as it bakes, though that would extend this recipe's production time.
