Hi llse, sorry to hear this happened! There can be a few things at play here. The first and most obvious is mismeasurement, which would simply mean too much water or not enough flour. It could also be environmental factors at play meaning it is just simply a much more humid day. With this recipe in particular, it is just fine to give a few extra folds if needed. If the dough has not quite developed enough and still seems slack, you can add an additional 2-3 folds to help it to gain more strength.
