I don’t understand about leaving the bread uncovered for it’s final proof, when indoor humidity levels in the winter in the north country are between 15-20% the bread forms a skin which prevents it from raising to its full potential. A light plastic bag over the bread certainly wouldn’t hold it from rising, your thoughts.
