Wonderful bread, one that my wife even likes. I’m on my second go around with it and it is amazing the stretching and folding and how the bread comes together right in your own hands. The one change I made was I steamed the bread for the first 10 minutes of baking. Seemed contrary to my years of bread baking to not use steam to increase oven spring… Does that increase the thickness of the crust?
