Hi Margie, if you're looking for a whole grain ciabatta recipe, we've got you covered, but if you're looking to achieve the lovely open crumb structure that is the hallmark of this bread, we wouldn't recommend making any substitutions. Even trying to convert it to a sourdough recipe is going to change this recipe significantly.
