my dough was way to slack and sticky to even perform any folds.... Any idea why? I weighed all ingredients and adhered to the dough temp recommended.
did I not mix it well enough to begin with? you don't really provide many details on that part of the recipe, was I supposed to mix/knead via a mixer for a certain amount of time? Very disappointed that the dough didn't come together at all
