WOW...this recipe and technique has my mind blown! I've never heard of Pan de Cristal. I agree that it a beautiful, and unique, loaf of bread. I have baked bread in the past but my experience is limited. I went to culinary school for one year, and we made ciabatta and bialys in a bread baking class. Other than that, I've only made things like focaccia, cinnamon buns, raisin bread, and dinner rolls as of now. I'm going to save the recipe for "Glass bread", use this blog post for reference, and I think that I'm going to give it a try. Thank you for sharing your expertise!
