Those tips from your kitchen in addition to the suggestions offered by people in the comment section have been very helpful--thank you to all. Have always loved baking old world bread and pastry recipes, but my increasing physical challenges (arthritis etc.) make baking more "intense" than it used to be. My Kitchen-Aid 6 quart mixer is my Sous chef (the wondrous dough hook). Since my mastectomies my upper body strength has dropped considerably, so I use a pasta machine instead of a rolling pin to turn out pierogi dough. Still make about 200 pierogi every couple of months to share and freeze. I'm sure the pasta machine is no great pain relieving tip, but wish there were a pasta/dough machine out there for the home baker/cook wide enough to turn out pie width doughs. I've seen professional machines with wide tracks and huge price tags, but nothing for the home cook. Maybe KAF has something I may have overlooked? Please tell me if you know of anything.
