I use my Kitchenaid mixer for most of my baking. I've found after watching KAF videos that using a stretch and fold method instead of kneading is much less stressful on my hands. I've also learned that when rolling out dough, particularly pizza dough, it's easier to roll it out a bit, let it rest, and then continue rolling. I've purchased a couple of Kyocera ceramic knives that are very sharp and lightweight, making it much easier on my hands when cutting hard vegetables like carrots. The one I particularly like is the Nakiri and shaped like a narrow cleaver. I can press down with both hands to chop. Thankfully a small local cooking store let me try them out before purchasing after I returned a very lovely very heavy chef's knife my husband had bought me as a gift.
