After some one to one comparison, I switched from using a dough scraper to using a long handled dough whisk when mixing and folding heavy dough. The dough whisk’s long handle provides much more leverage without the pain of trying to grip and lift dough with the scraper. Love the recognition and affirmation that older bakers sometimes lose their grip!
