I was a pastry cook over 20 years ago and baking/cooking is my passion. I now suffer from SLE and get extreme joint and muscle pain if overworked, and small things like making a cake or chopping vegetables, even doing dishes now are sometimes nearly impossible. I greatly appreciate your article. There’s no shame in using whatever equipment/means necessary to make creation possible. One thing that i’ve had to do within the last several years has to do with rolling out pie dough and cookie dough. Usually you chill the dough in a disk prior to rolling, but now I put the dough between two pieces of parchment (sometimes i put a towel underneath to prevent movement or even tape it to the counter with painters tape) and roll it while the dough is still very soft, then chill it. It helps tremendously. I couldn’t make pie crust any other way!
