Thanks for a great article. I wish I had read this before baking a sourdough bread recipe from your site. I found out the hard way that it needs to be at a lower temp and takes less time. Thankfully I caught the bread before it was scorched! I’m glad to know now how to proceed for the next few weeks, while I wait for our oven to be delivered. Your sourdough recipes so far have been spot on!
