To clarify.." commercial"yeast. So not yeast found in a typical grocery store? Also, what gives commercial baked sourdough its lovely yellow/golden shiny crust? My homemade has dull brown crust. And to add to my sourdough baking challenge, I am a native SF who has relocated to New Mexico..at 6,100 ft altitude.
