I think people can be snobs about so much of nothing. If adding yeast gives you your desired bread then go with it girl!! My husband is Celiac and he now eats sourdough bread that I make. We were shocked that he hasn't had any issues at all! I got an attachment for my kitchenmaid mixer and now grind my own wheat and I have found a type of wheat berries that are larger and great for pastry flour. I love all of King Arthur's products but I wanted to see if I could tell a difference milling my own. I have definitely decided that with my milled bread I really need to use yeast as well as my starter. Best of luck to you on your baking journey!
