Hi Elaine, we're not qualified to answer dietary questions such as this, simply because we are bakers and not doctors or nutritionists. However, if your major concern is the number of hours the flour has fermented, then you're probably better off focusing on recipes that do not include commercial yeast, since this ingredient tends to speed up the process. You may find that PJ's recipe for Easy Everyday Sourdough Bread works well for you, since this recipe includes quite a long fermentation time at room temperature. Another sourdough bread recipe that might fit the bill is the Pain de Campagne recipe.
