Thank you for this informative article. I love simplifying and having fun in the kitchen and work full time. I found a recipe that I love and works every time and it’s now part of my weekly routine. It exemplifies exactly what you say above! I make it on weekends and only add half of the stated amount of yeast (1 tsp for 560 g of flour). This is because I still like to have a slower rise to develop the flavors. Little hands on time, I get on with my day while it’s rising and everyone raves about the bread!
