Hi Ellen, as it so happens PJ did test this recipe in her air fryer and found that the recipe as written made two 6-inch cheesecakes perfectly, so you could definitely half this recipe or make two smaller cheesecakes. If you happen to have an air fryer, then PJ has lots of baking tips for you, but if you want to bake a smaller cheesecake in your regular oven, then you'll have to experiment with the baking time a bit. I would still bake according to the recipe directions, but start checking around 12-15 minutes, and then reset the timer from there. If the top doesn't brown sufficiently by the time the cheesecake tests done, then you might need to stick it under the broiler for a minute or two.
