Yes Michele- not only will it effect the caramelizing on the top but also the texture on the inside of the cheesecake. If you decide to give it a try with less sugar to see if you still like it, we would suggest starting with a small reduction first. Reduce by 25% with your first test, and then maybe try 50% if you like the results of the first.
