Sorry for the late reply, Beth! I hope your cheesecake turned out to be a hit! Since this recipe specifically calls for a food processor, it is not necessary nor recommended to use softened cream cheese like in other cheese cake recipes. In this recipe and unless otherwise specified, all ingredients in our recipes that are normally stored in the fridge are used straight out of the fridge without being warmed up. Happy baking!
