Hi Jean,
As you can imagine with a recipe that took this long to perfect, making changes to can really throw it off, in particular the pan size and baking temperature are key to success. Vanilla or other flavoring would be fine, although we highly recommend making it at least once just as written, it's completely wonderful and unique just as is!
