Hi JoAnne, we're happy to hear your bagels turned out great! We don't recommend using diastatic malt powder in this recipe to replace the barley malt syrup, but non-diastatic malt powder will work in a pinch. Add 2-3 teaspoons non-diastatic malt powder to the dough, and 2 tablespoons to the water bath.
