Hi Kathy, you won't get quite as much flavor from the non-diastatic malt powder, but you can certainly substitute it if that's what you have on hand. Use 2 teaspoons (or a bit more) of non-diastatic malt powder in the dough, and 2 tablespoons of non-diastatic malt powder in the water bath.
