I've made a number of Yule log cakes. I like to dust a clean tea towel with lots of 10x sugar, then turn the cake out immediately onto the towel, remove the parchment, then roll. The sugar helps the cake not to stick and the towel keeps in the moisture as the cake cools. So far, works every time with chocolate or other sponges.
