I make all my own vanilla on a two-to-three year cycle using Banff Ice vodka and the best vanilla beans I can get. (Properly aged vanilla has a magical flavour!) I also make a Warm Spice extract using vodka, cinnamon sticks, vanilla beans, cracked whole nutmegs, whole allspice, ginger root, and whole cloves. It’s incredibly good in oatmeal cookies, apple crisps, pound cakes, and gingerbread. My third extract is a homemade Fiori Di Sicilia with vanilla beans, lemon peel, and orange peel. Super to use and always a welcome gift!
