I love blondies. Well. I used to - before i learned I am allergic to wheat, milk, eggs, chocolate, rice, oats, and soy (and chicken but that is never a factor in baking!). So what's a blondie-loving girl to do? Most of the time I use white spel flour instead of AP flour and Measure for Measure is an awesome substitute for wheat flour. I have had great success with flax meal as an egg substitute, but I have not found a non-dairy margarine that I think will stand up to this treatment. I have tried Miyoko's cultured faux butter but it seems greasy / oily. Help? (Yes i know m4m has rice flour but I can tolerate small smounts of rice).
