Terrific post and some of us agree 100% with the premise! My question is whether you ever had the blondies made by Just Desserts in San Francisco? You look young so i expect you didn't. They stopped making them at least 30 years ago when they switched from running their own cafes to selling wholesale to high end stores. I wrote to them asking for the blondies recipe and the person i reached said she'd look for it, but i never heard back.
The blondies were soft/chewy with a thin crisp (if that's the right word) top. They had chocolate chips and possibly -- if i'm remembering right -- came either with or without walnuts. The "with" blondies weren't overwhelmed by walnuts, though. Just Desserts opened in the mid-1970s and were one of the first bakeries in the Bay Area to use high quality ingredients -- real butter, no mixes, etc. My son and I have been trying to duplicate those blondies for decades now!
