What about freezing the dough - particularly pre-shaped? I freeze pre-shaped animal cookies and rolled ginger snap cookies and bake from frozen as needed. Could you do this with other rolled, drop, or springerle cookies? Any you wouldn’t freeze and then bake from frozen?
