This is fascinating and helpful! I don't cook or eat vegan often though also don't like the idea of "wasting" and egg just for a wash. Besides using heavy cream for goods like biscuits I never thought non-dairy milk would have enough fat or protein to provide the color and shine. I always have maple syrup on hand too. Thanks for the testing and information.
