Hi. I just read up on this question. So, Ceylon cinnamon (Canela) is the cinnamon used in Mexico or for mexican cooking due to the milder (sweet and savory) taste. The Ceylon sticks are much more delicate and thinner and can be ground simply in a coffee or spice grinder or a mortar and pestle/ molcajete.
