Hi Jay! With cinnamon, it really comes down to personal taste preferences here. We may recommend using a Cassia style cinnamon (or an Indonesian style) for the recipe you suggest. Cassia is noticeably deeper in color, with an ambrosial, woodsy spice. Perfect for a savory stew!
