Great article! I have been researching cinnamon and this article made all the details come together in a quick reference, Thank You. Not realizing the differences in cinnamon I have been using other spices to jazz things up, maybe bc I was using big box/store brand "ground cinnamon". I look forward to experimenting with my new knowledge!
