Hi Mary! To be a true sourdough, you would omit the instant yeast and use only flour and water to cultivate fermentation in a starter over time. While you will see yeast in the occasional sourdough recipe to support the rise, the starter should not have any in it and be capable of doubling in size when ripe. Happy baking!
